Sprague brook park is a county park in Erie County. It has a two mile trail that people skate ski on. Look at http://www.wnyrin.com/c_erie/comm/park-rec/park/sardt_spra.html
Or just do a search for Sprague Brook Park. The site also has a map that you can click on. Sprague Brook is in Erie County and sits on the border of the towns of Concord and Sardinia. It has signs pointing to the x country trail when you enter the park. The trail is a two mile loop. There is a warming hut with a wood stove in it.

There is also the Erie County Forestry Park. I believe this park is a little less used and I don't know if people skate ski there.

Try Allegany State Park near Salamanca NY, about 1/2 hour from Ellicottville.
Approximately 35k of trails, some designated for skating.
