Default M or L binding size?

Just curious what option is more like to have better comfort and
performance.
(placement/size of strap pads, strap lengths, etc...)

See which one allows you to center the boot across the board better, i.e.
which one evenly distributes the overhang between heel side and toe side.
They may both do an equally good job if you can move the heel cup in an out,
but if they are like my Salomons and you can', one will work better than the
other.

Default M or L binding size?

My boots are size 11.
Ride's MEDIUM bindings fit 9-11 and their LARGE bindings fit 11-13.

I'm in a 10.5 and was in a similar position when I picked up bindings
last (salomon spx6). I ended up with the L just because of stock
availability (I wanted the gear upgrade for a weekend trip). If I
could chose again, I think I would go to the M. I did take a day on
the hill in the M of that particular binding, and the biggest
difference I found betwen the M and the L is that with the smaller
binding the toe ramp is further toward the ball of your foot, which
did make things feel a little more responsive.

I wouldn't sweat it though... having rode in both sizes I think the
difference is quite minor in my case. If you can, try both, or see if
the shop will let you exchange if you find you want to try the other.
