Default foot size changed???

It seems like my feet have grown from us size 10 to us size 11 in the past 2
years. Same boots and shoes which used to fit fine, now have my toe rubbing
against the front of the shoe. Since I am 49 and don't think I am supposed
to be growing, this is unexpected. Anybody else ever experience such a
thing?

Yep. Your arches tend to flatten with age making your foot a bit longer.

Yep. Went from a size 9 and a half 15 years ago to a 10 and a half now, with
half of that change in the last couple of years. Someone suggested that it was
just my arches flattening as I got older but I prefer to think that all my body
parts continue to grow as I age.

I'm 50, and I've also started buying my shoes a size larger. I do
still sometimes use some classic boots that I've had for about 10
years, but I can only use them with very thin socks now.

My feet have been pancake flat all my life, so the 'flatten with age'
theory doesn't explain what's happened with me.

I agree; somewhere after age 40 my arches fell and my feet grew. This
is pretty costly when you have spent years acquiring footwear for all
your different sports. In my case, I ignored the warming signs until
feet were in terrible shape. All my hiking and running really trashed
my feet. I now wear custom orthotics and tape my arches before hiking,
running or skiing and have no problems.
Don't wait to have your feet looked at if all your favorite sports are
done on your feet.

May be it is the plastic out sole of the boot shrinking over time?

Plastics can shrink considerably over years but in my experience boot
"grows" slightly at first.

foot grew a size, and when I took most of the weight off it
shrunk a half size back.

One thing to suspect is that your arches are falling--
So your foot hasn't really grown, it's just flattening out.

I'm going through the same thing, but dealing with another consequence of that process: tendinitis in the tendons running along the bottom of my feet (planar fasciitis). Based on the assumption that you do NOT want to deal with this (take it from me!), try getting arch supports-- "Superfeet" make a very good non-prescription orthotic; or you may want to go to a _good_ (i.e., sports-related) podiatrist/physical therapist/whatever (get reccomendations!) and have custom orthotics made.

Superfeet will set you back about the same amount as a pair of garage-sale ski boots; good orthotics cost about the same as a pair of touring boots bought at retail. So try spending the money on your feet before you spend it on new boots.

As a bonus, if your arches are indeed flattening out, you will be surprised how much more balance and alignment you have over your foot when you ski (and walk, too, for that matter).

1) No, haven't put on any weight (some of us are just lucky with fast
metabolisms!)
2) Funny you should mention superfeet; I got a pair when I bought a pair of
Karhu Leathers last year, but it turns out the Superfeet run small, and
don't really fill the bottom of the boot well. Didn't bother me much till
now, because now my toe hangs over the edge. I also thought the Superfeet
were kind of solid,, but still better (at least in support) than the liners
that came in the boot originally.
One bright spot is that I bought these boots large, part so I could wear
extra socks and part because they didn't have exactly the size I was after,
so this one pair of boots I can still use (11 1/2's), but not the brand new
pair, of what used to be my shoe size of 10.
I will take your advice seriously and add some good orthotics to my boots.
