Default good resort for christmas/new year

Hey there, JP:

You have described Apex Resort to a T. Everything you mentioned plus an
full size outdoor skating rink. If snow is sketchy early in the season it's
no problem... they are making snow in November so that ski teams from far
and wide can practice early. Check out the Saddleback Lodge for the
romantic side of things and let Diesel (real name is John) know Doug from
Rossland/Red Mt. sent you!

intermediate level skiers) and would like some suggestions.

We're not plannning a hard core ski week, but somewhere that would be
more a romantic week away, with some skiing on the side. We would like
somewhere that's not too big and crowded, more quiet mountain village.
The wife wants to try snow boarding, and I want a couple days skiing.
We'd like the option to try X-country and maybe dogsledding/sleigh

Willing to go anywhere in North America/Canada, but looking for
suggestions.
