As a nationwide tourguide I found that whole area to be the best in the country for that kind of stuff. Grand Canyon, Moab area (2 national parks, a state park that overlooks one of them), Lake Powell, Monument Valley, Zion, Bryce, Capitol Reef. And those are just the centers of attention. Each is really part of a much bigger area that offers much that doesn't fall inside the boundaries of the named attraction. Don't take the interstate unless pinched for time or weather.

Brian Head looks to be the best bet, especially since we can then stop over at Bryce.
Do they normally have a fair amount of groomed trails?

They're all groomed, and EXTREMELY well. No real steeps, but really
NICE skiing. You can't go wrong at BH. And, in addition to Bryce, you
can go to Zion and Kolob Canyons as well as Cedar Breaks (which is
within walking distance if you like to walk).
