I now have TWO carcasses to process and the freezer is full. Ayup. Throw the carcasses, broken up as required, into a slow cooker. Add a couple boxes of chicken broth and enough water to cover. Add celery and onions for flavor. You can also add bullion cubes or packs for salt and additional flavor. Cook on low over night. Add more onions, carrots, whatever, season to taste. Poultry seasoning/sage etc. Sift out the bones (maybe before adding more veggies) season to taste cook a bit longer until the other veggies are done. Enjoy. Cooking long and slow makes the house smell great. |
